I'm so glad you like the music! I did a Google search for Mexican Midi files and downloaded the ones I liked. Most of the melodies here (except for Marc Anthony's I need to know, Margaritaville, and Tequila are old Mexican tunes, mostly dating back to the Mexican revolution. I also did a search on Polish Polkas for my genealogy website and found some great ones! ---- Melanie

It looks really good. I would like to order your cook book, but I prefer to send a check. I was born in Mexico City, and I lived in Puebla for about 9 years as a little girl. Now I live her in the U.S. I remember my grandmother would make what she called "mole de olla" would you know how to make that recipe. It was not the consistency of mole but it was more like a soup which had chiken, carrots, squash, corn on the cob and a side dish of Mexican red rice. It was really good. I miss Mexican food very much. I really can't stand the TEX-MEX cooking. My e-mail is rebgue_2000@yahoo

I like your site, but what I liked to see, are pitures of the actual "platos de comida" because many times we like to eat what we see looks good... Campechano means a mixture of shellfish. When you ask for a campechano, you're asking for at least 2 varieties in one glass. Shrimp cocktail would just be coctel de camaron. Hot sauce for Pozole is generally made from either chile piquin or chile de arbol. The chiles are soaked in hot water, then liquified. Some people also add a little bit of the pozole to the blender to give the sauce body. Also, white pozole has garlic in it, a LOT of garlic. I use 3 heads of garlic to about 5 pounds of meat to one kilo (dry) of hominy. Guacamole generally has lime juice in it to retard browning and add flavor.

Mel- Thanks so much for your awesome web site and recipies! I found you through the Prodigy link! We live in Charlotte, NC and have a hard time finding truly "authentic" mexican food. We used to live in Detroit, and miss our favorite place there. They had the best cheese enchiladas- made with white cheese, similar to muenster, we surmised. We've tried to make them the same way but we're missing that special "something"! They also had a great botana "nacho" dish, with beans and avacado and sliced onions. We've also come close to it- but no cigar! We still dream about this place! Everything there is fabulous. the place is called "The Mexican Fiesta" on Ford and Telegraph Roads in Detroit. If you ever get there, or can get them to share some secrets with you- let me know!!!
